Sea Coconut Cha Cha

Ingredient:
10 pcs Screwpine leaves
500 gm thick coconut santan + 4 tbsp condensed milk
1000 gm hot pandan stock
150 gm sugar
2 ½ tbsp plain wheat flour(mix into 200gm water)
1 can TC BOY Sea Coconut in syrup
500 gm sweet potato cubes
500 gm diced yam cubes
300gm cooked coloured tapioca flour jelly
Preparation:
1.Peel and cut sweet potatoes and yam into cubes. Steam each separately until cooked. Set aside. Pre-cook tapioca flour jelly cubes.
2. Boil hot pandan stock, sugar until quick boil , and then add in thick coconut, condensed milk and thickening flour mixture. Stir mix well until just boil.
3. Add in cooked sweet potato cubes and taro cubes. Add in some ice cubes.
4. Finally add in cooked tapioca flour jelly cubes and TC Boy Sea Coconut in Syrup just before serving. Serve hot or cold.
Chef tips:
A slice of semen lodoiceae maldivicae (African hai di ye) is being used in making soup for treating chronic cough and for arresting bleeding.
