Tuna Curry with Bean Sauce

Ingredient:
2 x 180g cans TC BOY Solid White meat tuna in brine, drained
2 cups coconut cream
3 cups coconut milk
3 tablespoons red curry paste
½ cup fried ground nuts
2-3 tablespoons fish sauce
1 ½ tablespoons brown sugar
6 pcs kaffir lime leaves
2 red chilies, finely sliced
1 cup horapha basil leaves
Preparation:
1. Cook 1 ½ cup of coconut milk until thickened and fragrant. Set aside
2. Heat the red curry paste, add the balance of coconut milk and cook on medium flame until simmer and the oil surfaces.
3. Add TC BOY Tuna, kaffir lime leaves, cook on medium flame.
4. Add ground nuts, fish sauce and brown sugar. Add chilies , basil leaves and remove from basil.Spoon the coconut cream on the curry before serving.
