Matsaman Curry Tuna

Ingredient:
3 x 180g cans TC BOY solid white meat tuna in extra virgin olive oil, drained
4 tablespoons matsaman curry powder
1pc onion, peeled and thinly sliced
2 pcs garlic, peeled and finely chopped
10pcs shallots, peeled and thinly sliced
2cm cinnamon
4 buds clove
2 buds star anise
½ pc fresh pineapple, peeled and diced
1pc eggplant (cut to 4)
2 bunches basil leaves
2 cups coconut milk
½ cup vegetable oil
4 tablespoons fish sauce
2 tablespoon sugar
Preparation:
1. Heat vegetable oil, sauté onion, shallots, garlic, cinnamon, cloves, star anise and matsaman curry powder until fragrant. Add coconut milk and let it simmer.
2. Add TC BOY Tuna, pineapple, eggplant and basil leaves.
3. Add fish sauce, sugar and garnish before serving.
