Simply delicious and aromatic. This balinese style pepes tuna is easy to prepare and suitable as an appetizer!
Ingredient:
3 cans TC BOY Solid Tuna in Brine, drained
1 tablespoons lime juice
1 tablespoons tamarind juice
4 stalks spring onions, chopped
5 stalks basil (daun selasih) leaves ,chopped
1 red chilli, chopped finely
Others salt to taste
Banana leaves
Ground to a fine paste
2.5 cm fresh turmeric, peeled
5 small onions, peeled
3 cloves garlic, peeled
1 tablespoon palm sugar or brown sugar
1.5 cm ginger, peeled
55 g candlenuts
1 stalk lemon grass, sliced
1 cm galangal, peeled
Preparation:
1. Combine red chili with tamarind juice. Add salt to taste
2. Add TC BOY Tuna ,mash the tuna and add the grounded spices, chopped basil,spring onions, lime juice and mix well.
3. Place some mixture on a piece of banana leaf, fold and wrap properly. Repeat until all the mixture is used up.
4. Grill over glowing charcoal until cooked.
