2 cans TC BOY Tuna with chilli Padi
1 Young coconut
2 tablespoons Thai red curry paste
300g prawns, peeled & minced
300g crab meat
1 cup coconut milk
1cmgalangal, peeled
3 pieces kaffir lime leaves, sliced very fine
1 stalk basil (selasih) leaves, sliced very fine
1 red chilli, sliced very fine
1 tablespoon fish sauce
2 teaspoons lime juice
1 teaspoon sugar
2 tablespoon chopped coriander
1 tablespoon roasted grated coconut (kerisik)
Preparation:
1. Cut though the top of the coconut, scoop out the flech, slice and set aside.
2. Heat coconut milk until it thickens. Add thai red curry paste and simmer until the oil surfaces.
3. Stir in sliced coconut flesh, crab meat, prawn, chopped coriander, red chillies and roasted grated coconut. Simmer for a while, then add sliced kaffir lime leaves and chopped basil leaves.
4. Turn off flame and add fish sauce, lime juice and sugar to taste.
5. Add galangal and TC BOY Tuna, mix well and pour mixture into prepared coconut. Sprinkle some chopped basil over.
6. Bake in pre-heated oven 180 °C for 20 minutes, until mixture boils and thickened. Serve Hot.
