Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with various ingredients such as meat, cheeses, vegetables or pasta. Powerpack with nutrients and suitable for family gathering ocassions.
Ingredient:
2 cans TC BOY Solid Tuna in Brine, drained
10 eggs
4 potatoes, boiled & sliced
2 large onions,peeled & sliced
1 brinjal, sliced & roasted
1 red capsicum, sliced & roasted
1 zucchini, sliced & roasted
10 black olives, halved
6 tablespoons olive oil
Others a handful parsley, chopped finely
Ground black pepper
Fresh basil, finely sliced
Salt to taste
Preparation:
1. Beat eggs together with black pepper, some chopped parsley and salt. Add a little olive oil.
2. Add TC BOY Tuna, large onions, potato, some roasted brinjal, capsicums, zucchini and olives. Mix well.
3. Pour into a hot frying pan and cook over slow fire.
4. Sprinkle chopped basil on the egg mixture and coo covered on medium flame for 15 – 20 minutes.
5. Place serving plate on top of frying pan and flip the frittata onto it. Garnish with the balance of the roasted vegetables and chopped basil.
