Penne Fried with Tuna

Ingredient:
2 cans TC BOY Chili Tuna with Chile Padi
I packets Penne, boiled & drained
6 cloves garlic, peeled & chopped finely
1 large onion, chopped finely
2 red chilies, chopped finely
½ cupolive oil
6 tomatoes, seeded & chopped
200 g Chinese spinach, blanched
1 zucchini, sliced
2 red capsicums, roasted & sliced lengthwise
3 tablespoons capers
Others a handful of basil
Ground pepper
Salt to taste
Preparation:
1. Heat olive oil and sauté garlic and onions until soft.
2. Add red chilies and a little capers and sauté until fragrant.
3. Add in sliced zucchini, TC BOY Tuna and blanched Chinese spinach, followed by tomatoes and ground pepper.
4. Add in Penne and stir fry. Add in chopped basil and some red capsicums, season with salt.
5. Arrange some red capsicums on top of fried penne. Garnish with some capers and chopped basil.
