Tuna Stuffed Bell Peppers

Ingredient:
2 cans TC BOY Solid White Meat
Tuna in Vegetable oil,drained
6 capsicums, 3 red & 3 green
1 cup cooked rice,cooled
1 large onion, peeled& diced small
2 cloves garlic,peeled & chopped finely
1 red chili, minced
1 cup chicken stock
½ cup chili sauce
½ cup tomato sauce
6 tablespoons olive oil
Others a handful parsley,chopped finely
Fresh basil, finely chopped
2 pieces bay leaves
Juice from ½ lemon
Salt & sugar to taste
black pepper

Preparation:
1. Cut off the tops of the capsicums, remove seeds, reserve tops.
2. For the sauce, heat chicken stock in a pot. Add chili sauce, tomato sauce and allow to slimmer for 2-3 minutes. Add in a little olive oil, water and lemon juice, add salt to taste.
3. Heat olive oild and sauté onions until they become soft. Then add garlic, parsley and bay leaves, sauté until all ingredients are soft.
4. Ass TC BOY Tuna , rice, red chilies, chopped parsley, basil and a little black pepper, salt sugar to taste.
5. Spoon filling into capsicums, replace the tops and arrange on a baking tray.
6. Top with tomato sauce and bake in pre-heated oven at 180 C for 40 mnutes.
7. Spoon remaining sauce over the capsicums and serve hot.
