Pattaya Porridge
巴达雅金枪鱼粥
Bubur Nasi Pattaya

Ingredient:
2 x 180g cans TC BOY Solid White Meat Tuna in Vegetable Oil, drained
2 cups rice
10 cups chicken stock
2pcs onion, peeled and chopped
2 stalks lemongrass
2 cloves garlic, peeled and chopped
1 cup sweet potato, peeled and diced
1 cup yam, peeled and diced
1 cup groundnuts(fried)
4 tablespoons red thai curry paste
2 brunches coriander leaves
2pcs kaffir lime leaves
1pc Lime
1cup Vermicelli (fried)
Ohers salt and pepper to taste
Cooking oil
Preparation:
1. Heat cooking oil, sauté onion , garlic and lemongrass.Add red thai curry paste and chicken stock and let it simmer.
2.Add rice, sweet potato and yam. Simmer until rice and sweet potato soft.
3. Add TC BOY Tuna, coriander leaves, kaffir lime leaves,salt and pepper.Garnish with fried vermicelli, fried ground nuts and lime before serving.
