Tuna With pumpkin soup

Sup Labu Dengan Ikan Tuna

Ingredient:
2 x 180g cans TC BOY Solid Tuna in Vegetable Oil
500g yellow pumpkin, diced
2 pcs onion, peeled and diced
1 tablespoon red thai curry paste
2 tablespoons ginger, peeled and finely sliced
8 tablespoons chicken stock
6 tablespoons olive oil
2 tablespoons butter
1 pc green apple, peeled and diced
Others sugar and salt to taste, coriander leaves, chopped
Preparation:
1. Heat olive oil and butter, sauté onion and ginger. Fry pumpkin until soft. Add red Thai curry paste and chicken stock.
2. Simmer until pumpkin soft. Cool the pumpkin before grinding it finely in a blender. Add back into pot.Add green apple and TC BOY Tuna.
3. Add salt and sugar to taste.Add coriander leaves and simmer for 5 minutes. Can be served cold or hot.
