Ingredient:
4 x 180g cans TC BOY Solid Tuna in Sunflower Oil, drained
4pcs Kaffir lime leaves
1pc tomato(cut to 4)
2 stalks green pepper corn
4 cups coconut milk
2 cups small eggplant
10pcs bird’s eye chillies, finely sliced
Others cooking oil, fish sauce and sugar to taste
Ground Ingredients for curry paste:
15pcs shallots, peeled
4 cloves garlic, peeled
10pcs green chilles (no seeds)
6 pcs coriander roots
4 stalks lemongrass
2cm galangal
Preparation:
1. Heat oil, sauté ground curry paste until fragrant.
2. Add coconut milk, eggplant, green pepper corn, tomato and TC BOY Tuna. Mix well.
3. Cook until thickened. Sprinkle kaffie lime leaves, bird’s eye chilies, fish sauce and sugar.
